Default I know theres different types of clutches, but whats the difference?

I have an 87 camaro and I'm getting a stage 2 racing clutch, I know that different clutches have different holding powers, but how big of a difference does it make performance wise?

you will haul ace but putting a stage three may just be to much the horse power will be ridiculous
