02 Dodge Stratus Engine Heat Warning light on?

How long: for the past week or so
Situation: after start of the engine and 6-7 minutes of driving my coolant indicator will go from C (cold) to H (hot) and then my engine heat light will come on. (The one that looks like thermometer with waves at the botton). I checked the coolant level in little tank it should be in and it looks fine. Actually even too full probably but i dont really think that's what making light go on.
Unfortunately, this car was made that you cannot access radiator unless you take front bumper off so I cant check the level of coolant in radiator.

Also, after shutting my car down after a drive I would look underneath and it doesnt look like fluid is leaking out..

So what is causing this?

lol what a pathetic situation tht u can't access 2 the radiator
the overheating problem could be the coolant or the engine oil
